ANTIPASTO
Antipasto or appetizers are food that rouse the appetite. They are usually served before a meal or as the first course, and are therefore light and savoury. They may be served cool or warm. Smaller pasta is often used as part of an appetizer to make a salad or while mixed with accompaniments such as cheeses, cold cuts, olives, toasted bread and raw or marinated vegetables.
SALAD
Can be eaten as a main or side dish. Pasta salads are very popular because they can consist of almost anything and contain inexpensive ingredients, and are quick and easy to prepare. Smaller pasta shapes are usually used for salads. Pasta salads also often contain some sort of creamy dressing, or even often mayonnaise.
STUFFED
The traditional shapes for stuffed pasta are: squares, circles, triangles and half moons, made of pasta sheets that are stuffed with a filling. Some of the most common stuffed pastas include: tortellini, ravioli and cannelloni. The fillings differ, and consist of a blend of ingredients, for example, meats, cheeses, herbs, mushrooms, and vegetables...and even pumpkin! Fillings can be very creative!
BAKED
Baked pasta, also called Pasta al forno, refers to any pasta baked in the oven instead of being boiled. Baked pasta can have layers of different ingredients and there are many different varieties. The most popular baked pasta is probably Lasagne. Single pasta such as Penne or Rigatoni for example, can also be baked in the oven. Baking pasta results in the pasta having a crisp surface. Baked pasta is commonly made with cheese on top. Making baked pasta is not as simple as boiling pasta but is a lot more fun and allows for much creativity in what ingredients to use, and what you wish to mix in with your pasta!
